Plantain
Plantains are popular in Western African and Caribbean cuisine. They are cousins of the banana but are not eaten raw. Aside from their unique flavor, plantains should be enjoyed for their high fiber, high potassium and high vitamin A nutrient values. A serving of plantain also provides other nutrients, vitamins C and K as well as niacin, calcium and iron. This versatile food can be used to replace potato in dishes. It can also be cut up and baked to make a tasty baked chip.
